FOOD STORAGE ENCHILADAS
2 Cans Costco Chicken Chunks
1 Can Black Beans
2 Cups cooked brown or white rice
1 4 oz can Dice Green Chiles
1 19 oz Can Old El Paso Enchilada Sauce
(Set aside ¾ cup to top enchiladas)
12 Flour Tortillas
Mix first 4 ingredients together. Add Enchilada sauce and stir all together.
Put ½ cup mixture in each and tortilla and roll up. Place in a 9x13”casserole
dish. Top with grated cheese if desired. Bake 35-45 Min. at °350.
HOME MADE TORTILLAS
3 Cups Flour (white or wheat)
1 Tsp Salt
1 Tsp Baking Powder
¼ Cup Shortening
1 Cup hot water
Mix first three ingredients well. Cut in the shortening, add hot water,
Mix and knead until well mixed. Let dough rest 5 minutes. Divide into 12
equal sized ball (about the size of at golf ball). Roll out on a floured board until very, very thin. Cook on a ungreased pancake griddle until bubbles on top side, then turn and cook until slightly brown on medium heat.

We are having a food storage potluck today and this is what I am taking, it is all food storage except the cheese topping which could be left off. It is really yummy! I think it will be a staple around here!!!

Way to go! Those look fabulous and yummy! Who said you had to eat cracked wheat and bran bisquits when forced to use your food storage! Good for you...and good for Clark and Dad who get to eat like kings in a pinch!!
